Mishti Pulao


Basmati rice – 1 cup
1 tsp ground Persian Saffron
Sugar – 2 tbsp.
Cinnamon – 1 one inch stick
Bay leaves – 2 nos.
4-5 cardamoms
wallnut pieces – ½ cup
Raisins – ½ cup
Salt as per taste


* Soak rice for 30 minutes. Drain.
* Heat ghee in a cooking pan and add bay leaf, cinnamon stick and cardamoms
* Add rice, saffron (crashed in 6tbsp of hot water), sugar and salt. Stir till all the grains are covered with turmeric powder.
* Add water, raisins and cashewnuts. Bring it to a boil, reduce heat and cover. Cook till done.
