Well it’s that time of the year again, Ramadan… when one is supposed to test their patience, abstinence capacity and focus on doing good in the world. Unfortunately, the culture has got us overeating around Iftar time(breaking the fast). Well, I used to be like that too! eat and eat sugar-fat rich foods, afraid i’d feel hungry the next day!
But knowing much about nutrition in the past 8years, I realized that binge eating wasn’t going to help me cope with Ramadan any better.
Well, this was my Iftar meal tonight.. it might look like a salad, but when you read the ingredients, you’d see just how substantial it is!
My little invention: Super awesome couscous salad! 🙂
45grams of couscous grains (soaked in 1/2 cup of hot water and a pinch of salt)
4 pieces of radish
6-8 cherry tomatoes
few slices of avocado
1tbsp of fresh lemon juice
1tbsp extra virgin olive oil
100grams of roasted skinless chicken breast
2 garlic cloves
1/2 small cucumber
tiny bit of salt and some pepper.
Mix all vegetables together (except for avocado), add lemon juice and olive oil, minced garlic cloves, salt and pepper. Add couscous, mix it up. and garnish with chicken breast and avocado slices.
